Ojja is a Tunisian dish that can be eaten at any meal and is tomato sauce-based (passata) with herbs and maybe chillies, but the best part is the egg broken into the middle and left to poach in the tomato juices.
Depending on the region and personal whims, it can also comprise cubed potato, beef sausage (merguez) or red peppers (as in this case). It is quick to make and oh-so-lovely with a crisp, warm baguette
Well I know how I’m going to be spending my Saturday morning. Could almost. almost be a Mexican dish (just need more chile and a bucket of lard). Hope to see some more technicolour food seduction again soon…..
